Let’s Make Chocolate Cake

Shh! Don’t tell anyone how simple this is to make!

If you’re looking for an easy chocolate cake recipe that’s not fussy (because I don’t do fussy) then here you go!

Chocolate Cake

Preheat oven to 350*F. Grease 2 9-inch round baking pans. Bake 30-35 minutes.

Dry Ingredients:

  • 2 cups of sugar

  • 1 3/4 cups of flour

  • 3/4 cups cocoa powder

  • 1 1/2 teaspoons of baking soda

  • 1 1/2 teaspoons of baking powder

  • 1 teaspoon of salt

Wet Ingredients:

  • 2 eggs

  • 1 cup of milk

  • 1/2 cup olive oil

  • 2 teaspoons of vanilla extract

  • 1 cup of boiling water

Combine dry ingredients in large bowl. Add eggs, milk, oil, & vanilla. Beat on medium speed for 2 minutes. Stir in boiling water. Batter will be thin. Pour into greased baking pans. Bake for 30 - 35 minutes until knife or toothpick inserted in the center comes out clean. Cool for 10 minutes and then remove from pans onto wire rack to allow to cool completely.

Chocolate Frosting

  • 1/2 cup or 1 stick of butter (melted)

  • 2/3 cup cocoa powder

  • 3 cups powdered sugar

  • 1/3 cup milk (plus a splash or two more)

  • 1 teaspoon vanilla extract

Melt butter. Stir in cocoa and alternatively add powdered sugar and milk beating to spreading consistency. Add a splash of milk if needed.

*Double recipe for extra frosting. Leftovers can be stored in the fridge for 1 week or freeze for 2-3 months.

Options: Decorate cake with powdered sugar. Used a stencil for an added touch.

Note: This cake is moist and will soak up the powdered sugar and would recommend powdering cake just before serving.
